Instructions
1. Roast the sweet potatoes:
Preheat oven to 425°F (220°C).
Rub sweet potatoes with olive oil, sprinkle with salt, and pierce each with a fork.
Place on a baking sheet and roast for 40–45 minutes, until tender and slightly caramelized.
2. Prepare the turkey filling:
While potatoes roast, heat olive oil in a large skillet over medium heat.
Add onion and sauté 3–4 minutes until softened.
Stir in garlic, bell pepper, and zucchini; cook another 4–5 minutes.
Add ground turkey and cook until browned, breaking it up with a spoon.
Stir in tomato paste, oregano, paprika, cumin, salt, and pepper.
Add broth to moisten, then simmer for 5 minutes until thickened.
Remove from heat and stir in parsley.
3. Make the yogurt-garlic sauce:
In a bowl, whisk Greek yogurt, olive oil, lemon juice, garlic, salt, and pepper until creamy. Chill until serving.
4. Assemble the stuffed potatoes:
Slice each sweet potato open lengthwise (don’t cut all the way through).
Fluff the insides with a fork and spoon the turkey filling on top.
Drizzle with yogurt-garlic sauce and sprinkle with feta and herbs.
5. Serve warm:
Arrange on a large platter or tray for group serving.
