Ingredients
4 slices whole-grain bread or English muffins, halved
1 cup cottage cheese
½ cup shredded mozzarella cheese
1 medium tomato, thinly sliced
1 tbsp extra virgin olive oil
1 tsp dried oregano or Italian seasoning
¼ tsp black pepper
¼ tsp sea salt
Fresh basil leaves or parsley, for garnish
Optional: drizzle of balsamic glaze or hot honey
Instructions
Preheat oven
Set your oven or toaster oven to 400°F (200°C).
Line a baking tray with parchment paper.
Prepare the base
