Ingredients

For the Cornbread

1 cup cornmeal

1 cup all-purpose flour

2 tbsp sugar

1 tbsp baking powder

½ tsp salt

1 cup buttermilk (or 1 cup milk + 1 tsp lemon juice)

2 large eggs

¼ cup olive oil

1–2 jalapenos, finely chopped

½ cup corn kernels

Optional: ¼ cup shredded cheddar or feta for savory flavor

For the Sweet Lime Honey Drizzle

2 tbsp honey

1 tsp fresh lime juice

½ tsp lime zest

Optional: pinch of chili flakes for an extra kick

Instructions

1. Preheat and Prepare

Preheat oven to 400°F (200°C).

Grease an 8-inch square baking dish or cast-iron skillet with butter or olive oil.

2. Mix the Dry Ingredients

In a large bowl, combine cornmeal, flour, sugar, baking powder, and salt.

Whisk to blend evenly.

3. Mix the Wet Ingredients

In a separate bowl, whisk together buttermilk, eggs, and melted butter.

Pour into the dry ingredients and stir gently until just combined (don’t overmix).

Fold in chopped jalapenos and corn kernels (plus cheese if using).

4. Bake
