Ingredients
For the Salad
2 medium zucchini, sliced lengthwise into thin strips
2 ears fresh corn, husked (or 1 ½ cups frozen corn, thawed)
1 cup cherry tomatoes, halved
¼ cup red onion, thinly sliced
½ cup crumbled feta cheese
2 tbsp extra virgin olive oil, for grilling
Salt and black pepper, to taste
For the Lemon Herb Dressing
3 tbsp extra virgin olive oil
1 ½ tbsp fresh lemon juice
1 tsp honey (or maple syrup)
1 clove garlic, finely minced
1 tbsp fresh parsley, chopped
1 tsp fresh basil or mint, chopped
Salt and pepper, to taste
Instructions
1. Grill the Vegetables
1. Preheat a grill pan or outdoor grill over medium-high heat
2. Brush zucchini slices and corn lightly with olive oil and sprinkle with salt and pepper.
3. Grill zucchini for 2–3 minutes per side, until tender and lightly charred.
4. Grill corn for 8–10 minutes, turning occasionally, until golden and smoky.
5. Once cooled slightly, cut the corn kernels off the cob.
2. Prepare the Dressing
1. In a small bowl, whisk together olive oil, lemon juice, honey, garlic, parsley, basil/mint, salt, and pepper until smooth and emulsified.
3. Assemble the Salad
1. Chop grilled zucchini into bite-sized pieces.
2. In a large bowl, combine grilled zucchini, corn kernels, cherry tomatoes, and red onion.
3. Pour over the lemon herb dressing and toss gently to coat.
4. Sprinkle with crumbled feta cheese before serving.
