4 large eggs

4 strips of bacon, chopped

½ cup shredded cheese (cheddar, mozzarella, or a mix)

2 tbsp milk or water

1 small onion, finely chopped

1 small tomato, diced

2–3 large flour tortillas (8–10 inch)

Additional cheese for sprinkling

Olive oil for cooking

Optional Add-ons:

Sliced avocado

Salsa or hot sauce

Spinach or arugula leaves

Instructions

1. Cook the Bacon

In a skillet over medium heat, cook chopped bacon until crispy.

Remove and set aside, leaving a little bacon fat in the skillet for extra flavor.

2. Scramble the Eggs

In a bowl, whisk eggs with milk or water, salt, and pepper.

In the same skillet, add olive oil or butter if needed.

Pour in eggs and stir gently over medium-low heat until soft and creamy.

Stir in cooked bacon, onions, tomatoes, and fresh herbs. Remove from heat.

3. Assemble the Quesadillas

Lay a tortilla flat and sprinkle some cheese on half.

Add the scrambled egg and bacon mixture over the cheese.

Sprinkle a little extra cheese on top and fold the tortilla in half.

4. Cook the Quesadillas

Heat a clean skillet over medium heat.

Place the folded quesadilla and cook 2–3 minutes per side until golden and crispy, and the cheese melts.

Repeat with remaining tortillas and filling.

5. Serve

Cut each quesadilla into wedges.

Serve hot with salsa, avocado, or a dollop of Greek yogurt.
