Instructions
Step 1: Roast or Saute Cherry Tomatoes
Preheat a small pan over medium heat.

Step 2: Poach the Eggs
Fill a saucepan with about 3 inches of water and bring to a gentle simmer (not a full boil).
Add vinegar if using.
Crack one egg into a small cup, then gently slide it into the simmering water.
Poach for 3–4 minutes for a runny yolk or 5 minutes for a firmer one.
