 Ingredients

2 cups all-purpose flour

1 tbsp baking powder

½ tsp salt

1½ cups shredded cheese (cheddar, Monterey Jack, or a blend work well), divided

1 cup milk

¼ cup melted butter 

Instructions

Preheat the oven to 375°F (190°C) and grease a loaf pan, or line it with parchment paper for easy removal.

Combine the dry ingredients:

In a large bowl, whisk together the flour, baking powder, salt, and garlic powder (if using).

Add cheese:

Fold in 1 cup of the shredded cheese, reserving the remaining ½ cup for topping.

Mix wet ingredients:

In a separate bowl, combine the milk and melted butter.

Combine wet and dry:

Pour the wet ingredients into the dry mixture. Stir gently with a spoon or spatula until just combined. The batter will be thick and slightly lumpy; be careful not to overmix, as this can result in tough bread.

Transfer to pan:

Spoon the batter into the prepared loaf pan and smooth the top evenly. Sprinkle the remaining ½ cup of cheese over the top.

Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Cool in the pan for 10 minutes before transferring to a wire rack to cool slightly more before slicing and serving warm.
