This salad combines protein-rich chickpeas, crisp vegetables, and feta cheese with a bright lemon vinaigrette.
It’s quick, healthy, and Mediterranean-friendly, full of flavor and textures — creamy, crunchy, and zesty.

 Ingredients

For the Salad:

1 can (15 oz) chickpeas, drained and rinsed

1 cup cucumber, diced

1 cup cherry tomatoes, halved

¼ cup red onion, finely diced

½ cup feta cheese, crumbled

¼ cup Kalamata olives, halved

2 tbsp fresh parsley, chopped

Optional: ¼ cup red bell pepper, diced

For the Lemon Vinaigrette:

3 tbsp extra virgin olive oil

1 ½ tbsp fresh lemon juice

1 tsp Dijon mustard

1 tsp honey or maple syrup

1 garlic clove, minced

Salt and pepper, to taste

 Instructions

1. Make the Lemon Vinaigrette

In a small bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey, garlic, salt, and pepper.

Adjust to taste — it should be bright and tangy

2. Prepare the Salad

In a large bowl, combine chickpeas, cucumber, cherry tomatoes, red onion, feta, olives, and parsley (and bell pepper if using).

Toss gently to combine.

3. Dress the Salad

Pour the lemon vinaigrette over the salad and toss to coat evenly.

4. Serve

Serve immediately or chill for 15–20 minutes to let flavors meld.

Optional garnish: extra parsley, a drizzle of olive oil, or a sprinkle of sumac for a tangy finish.
