 Ingredients

For the Salad:

2 chicken breasts, grilled or pan-seared, sliced

4 cups mixed salad greens (spinach, arugula, romaine)

1 cup fresh strawberries, sliced

¼ cup red onion, thinly sliced

¼ cup feta cheese, crumbled

¼ cup toasted almonds or walnuts, chopped

Optional: ½ cup cucumber, sliced

For the Dressing:

3 tbsp extra virgin olive oil

1 ½ tbsp balsamic vinegar

1 tsp honey or maple syrup

½ tsp Dijon mustard

Salt and pepper, to taste

 Instructions

1. Cook the Chicken

Season chicken with salt, pepper, and a pinch of garlic powder.

Grill or pan-sear over medium heat for 5–6 minutes per side until cooked through.

Let rest for 2–3 minutes, then slice thinly.

2. Make the Dressing

In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper.

Taste and adjust sweetness or acidity as needed.

3. Assemble the Salad

In a large bowl, combine salad greens, sliced strawberries, red onion, cucumber (if using), and nuts.

Top with sliced chicken and crumbled feta.

4. Dress and Serve

Drizzle the salad with the balsamic dressing.

Toss lightly or serve the dressing on the side for a cleaner presentation.

Add avocado slices for extra creaminess.
