A refreshing Mediterranean salad featuring creamy burrata, zesty lemon-marinated chickpeas, juicy tomatoes, crisp cucumbers, fresh herbs, and peppery arugula. It’s light yet satisfying — with protein from chickpeas, richness from burrata, and brightness from a lemon-herb vinaigrette.

Ingredients

Salad Base

1 can (400g) chickpeas, drained & rinsed

1 cup cherry tomatoes, halved

1 small cucumber, diced

½ small red onion, thinly sliced

2 handfuls fresh arugula or mixed greens

¼ cup fresh parsley or basil, chopped

1 ball burrata cheese (125g)

Optional: olives, avocado, roasted red peppers

Lemon Herb Dressing

3 tbsp extra virgin olive oil

Juice of 1 lemon

1 tsp honey or maple syrup

½ tsp Dijon mustard

1 garlic clove, grated

½ tsp dried oregano

Salt & pepper to taste

Instructions

Make the Lemon Dressing

Whisk together olive oil, lemon juice, honey, mustard, garlic, oregano, salt, and pepper.

Taste and adjust lemon/honey depending on how bright you like it.

Marinate the Chickpeas

Add chickpeas to a bowl.

Pour half of the lemon dressing over them.

Let sit for 5 minutes to soak the flavor.

Assemble the Salad

On a large plate or bowl: add arugula, tomatoes, cucumbers, red onion, and herbs.

Add the marinated chickpeas.

Drizzle the remaining dressing over everything.

Add the Burrata

Place the burrata ball in the center.

Gently tear it open so the creamy inside spills slightly over the salad.

Finish

Add a drizzle of olive oil, cracked black pepper, and extra lemon zest.

Serve immediately.
