Ingredients

For the Salad

1 large avocado, sliced or cubed

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini) or 1 large ball sliced

1 small cucumber, thinly sliced

1 handful fresh basil leaves

Sea salt, to taste

Black pepper, to taste

For the Light Lemon Dressing

2 tbsp extra virgin olive oil

1 tbsp fresh lemon juice

1 tsp honey

1 small clove garlic, grated

Pinch of dried oregano

Instructions

Prep the ingredients
Slice avocado, halve tomatoes, slice cucumber, and tear basil leaves gently.

Make the dressing
In a small bowl, whisk together:

olive oil

lemon juice

honey

garlic

dried oregano

salt and pepper

Assemble the salad
On a plate, layer tomatoes, mozzarella, avocado, and cucumber.

Add basil
Scatter fresh basil leaves on top.

Dress and serve
Drizzle the lemon dressing over the salad.
Add a final pinch of salt and serve immediately.
