Ingredients
For the crust:
1 sheet of puff pastry or phyllo dough (store-bought, for convenience)
1 tsp olive oil (for brushing phyllo)
1 cup cherry tomatoes, halved (mix red, yellow, and orange for color)
½ cup feta cheese, crumbled
¼ cup grated Parmesan cheese (optional, for extra flavor)
2 tbsp fresh basil, chopped
1 clove garlic, minced
1 large egg (for egg wash)
1 tbsp olive oil

1 tsp dried oregano (optional)
Instructions
1. Preheat the oven:
Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper.
2. Prepare the crust:
If using puff pastry, roll it out slightly and cut into 12 small squares.
If using phyllo dough, layer 3 sheets per pie, brushing lightly with olive oil between each sheet, then cut into 12 squares.
3. Prepare the filling:
In a bowl, combine cherry tomatoes, feta, Parmesan, basil, garlic, olive oil, salt, pepper, and oregano.
Mix gently to avoid smashing the tomatoes.
4. Assemble the pies:
Place each pastry square in a mini muffin tin (optional, for shape).
Spoon the tomato mixture onto each square.
Fold corners slightly over the filling if desired for a rustic look.
5. Egg wash:
Beat the egg and brush lightly over the edges of the pastry for a golden finish.
6. Bake:
Bake for 20–25 minutes, or until the pastry is golden and crisp.
7. Serve:
