Chipotle Chicken Burrito Bowl
A hearty bowl loaded with juicy chipotle-marinated chicken, cilantro-lime rice, black beans, corn, fresh veggies, and a creamy tangy dressing. Inspired by Chipotle restaurant bowls but healthier and homemade.

Ingredients
Chipotle Chicken
2 chicken breasts (or 3 small), sliced
1 tbsp olive oil
1 tbsp lemon or lime juice
1–2 tsp chipotle sauce OR 1 chipotle pepper in adobo (adjust spice)
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Optional: 1 tsp honey (balances spice beautifully)
For the Bowl Components
Cilantro-Lime Rice
1½ cups cooked rice
1 tbsp lemon or lime juice
1 tbsp chopped fresh coriander (cilantro)
Pinch salt
Veggies & Toppings
1 cup lettuce or mixed greens
1/2 cup black beans (cooked)
1/2 cup corn kernels
1 small tomato, diced
1/2 avocado, sliced (optional)
1/4 red onion, sliced
Optional: shredded cheese, jalapeños, olives
Creamy Chipotle Drizzle (optional but amazing)
2 tbsp Greek yogurt or mayo
1 tsp chipotle sauce
1/2 tsp lemon juice
Pinch salt
Instructions
1. Marinate the chicken
Mix olive oil, chipotle sauce, lemon/lime juice, paprika, cumin, garlic powder, salt, pepper, and honey.
Coat chicken and let marinate 10–15 minutes.
2. Cook the chicken
1. Heat a non-stick pan on medium-high.
2. Add chicken strips.
3. Cook 5–7 minutes, flipping until golden and juicy.
4. Set aside and slice if needed.
3. Prepare rice
Mix cooked rice with lime/lemon juice, cilantro, and a pinch of salt.
4. Build your burrito bowl
In a large bowl, layer:
- Cilantro-lime rice
- Lettuce
- Chicken
- Black beans
- Corn
- Tomatoes
- Onion
- Avocado (optional)
- Drizzle with creamy chipotle sauce.
Tips
Mild version: Use only 1 tsp chipotle sauce and add extra yogurt.
Extra protein: Add grilled shrimp or beans.
More veggies: Add sautéed bell peppers, cucumbers, or roasted sweet potatoes.
Meal prep: Keep chicken + rice in one box, veggies separate to stay fresh.
