Garlic Parmesan Chicken with Golden Potatoes

Ingredients
For the Chicken
500 g chicken breasts or thighs
1 tbsp olive oil
4 garlic cloves, minced
1/2 cup heavy cream OR milk + 1 tbsp cream cheese
1/4 cup grated Parmesan
1/2 cup chicken broth
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
Optional: 1 tsp lemon juice for brightness
For the Golden Potatoes
2 cups baby potatoes, halved
1½ tbsp olive oil
1/2 tsp paprika (optional)
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp dried rosemary or thyme
Instructions
1. Roast the golden potatoes
1. Preheat oven to 200°C (400°F).
2. Toss halved potatoes with olive oil, salt, pepper, paprika, and rosemary.
3. Spread on a baking tray and bake 20–25 minutes, until crispy and golden.
2. Cook the chicken
1. Season chicken with salt, pepper, oregano, and thyme.
2. Heat olive oil + butter in a skillet over medium-high heat.
3. Sear chicken 4–5 minutes per side until golden.
4. Remove chicken and set aside.
3. Make the garlic parmesan sauce
1. In the same pan, add minced garlic and sauté for 30 seconds.
2. Pour in chicken broth and scrape up brown bits.
3. Add cream (or milk + cream cheese).
4. Stir in Parmesan until melted and smooth.
5. Add lemon juice if using.
6. Simmer 2–3 minutes until creamy.
4. Combine
Return chicken to the pan and coat it in the garlic parmesan sauce.
Cook another 3–4 minutes until fully done and juicy.
5. Serve
Plate chicken with:
A big spoon of garlic parmesan sauce
Golden crispy potatoes
Fresh parsley or extra parmesan on top
Tips
Extra crispy potatoes: Let them roast the full 25 minutes.
Thicker sauce: Add 1 tsp cornstarch mixed with 1 tbsp water.
Lighter version: Use Greek yogurt + a splash of milk instead of cream.
Add veggies: Broccoli or green beans pair perfectly.
