½ cup cherry tomatoes, halved

½ cup cucumber, diced

¼ cup red onion, thinly sliced

¼ cup Kalamata olives, sliced

2–3 tbsp feta cheese, crumbled

Optional: ½ cup cooked quinoa or farro for extra substance

For the Tzatziki

½ cup Greek yogurt

¼ cup cucumber, grated and drained

1 small clove garlic, minced

1 tsp lemon juice

1 tsp olive oil

Salt & pepper to taste

Optional: 1 tsp fresh dill, chopped

Instructions

1. Prepare the Chicken

Toss chicken with olive oil, oregano, garlic powder, lemon juice, salt, and pepper.

Grill or pan-sear on medium heat for 6–8 minutes per side until cooked through.

Let rest 2–3 minutes, then slice into strips.

2. Make the Tzatziki

Grate cucumber and squeeze out excess water.

Mix Greek yogurt, cucumber, garlic, lemon juice, olive oil, salt, pepper, and dill (if using) until smooth.

3. Assemble the Salad Bowl

Place greens (and optional grains) in the base of a bowl.

Add cherry tomatoes, cucumber, red onion, and olives.
