Instructions
1. Roast the grapes
1. Preheat the oven to 400°F (200°C).
2. Line a baking tray; spread grapes on it.
3. Drizzle with olive oil, honey, salt, pepper, and thyme sprigs.
4. Roast 18–20 minutes, until grapes blister and soften but still hold shape.
5. Remove thyme sprigs; let grapes cool slightly.
2. Make the thyme honey drizzle
1. In a small bowl, whisk honey + warm water until pourable.
2. Stir in thyme leaves (and lemon zest if using).
3. Set aside.
3. Assemble the winter burrata board
1. Place burrata balls on a wooden board or platter.
2. Surround with roasted grapes.
3. Add toasted bread, nuts, and optional add-ons like pomegranate seeds or figs.
4. Drizzle burrata lightly with thyme honey.
5. Garnish with fresh herbs.
4. Serve
Serve warm roasted grapes next to cool creamy burrata — the contrast is magical.
Guests can spread burrata on bread and top with grapes + nuts + honey.
Notes
Red/black grapes caramelize best and give a rich color.
Burrata is best served at room temperature so it becomes luxuriously creamy.
Thyme can be swapped with rosemary for a more piney winter aroma.
Tips
Toast nuts in a dry pan for 2 minutes for deeper flavor.
Add 1–2 tbsp balsamic vinegar to the grapes before roasting for a gourmet twist.
Use a mix of grapes (black & red) to make the board more festive.
