Spicy Chicken Pepper Stir-Fry over Egg Noodles with Broccoli

Ingredients

For the Chicken Stir-Fry

2 chicken breasts, sliced into strips

Salt & black pepper

1 tbsp olive oil

1 medium onion, sliced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 tsp chili flakes (adjust to taste)

2 garlic cloves, minced

2 tbsp soy sauce

1 tsp honey

1 tsp cornstarch + 2 tbsp water (for thickening)

 

For the Noodles

 

150g egg noodles

 

Water + salt for boiling

 

For the Broccoli

 

1 cup broccoli florets

 

Water for steaming

 

Salt to taste

 

Instructions

 

Cook Noodles: Boil egg noodles in salted water according to package instructions (about 8–10 minutes). Drain and set aside.

 

Steam Broccoli: Steam broccoli for 5–6 minutes until bright green and tender.

 

Sauté Chicken & Veg: Heat oil in a large skillet. Add chicken, season with salt and pepper, and cook 5–6 minutes until browned. Add onions, garlic, and bell peppers. Stir-fry for 3–4 minutes.

 

Add Sauce: Stir in soy sauce, honey, and chili flakes. Mix cornstarch with water and add to the pan. Cook 2–3 minutes until the sauce thickens and coats everything.

 

Assemble: Place noodles in a bowl. Top with the spicy chicken stir-fry and steamed broccoli.

 

Serve: Sprinkle extra chili flakes for more heat, and serve hot.

 

Tips & Variations

 

Swap chicken for tofu for a vegetarian version.

 

Use udon or rice noodles instead of egg noodles.
