Christmas Ricotta Chia Pudding

Ingredients

For the Chia Pudding

1 cup milk (almond, oat, or regular)

3 tbsp chia seeds

1 tsp vanilla extract

1–2 tbsp maple syrup or honey

½ tsp cinnamon

Ricotta Cream Layer

¾ cup ricotta cheese

1–2 tbsp honey or maple syrup

½ tsp vanilla extract

Zest of ½ orange

Christmas Toppings

 

Fresh cranberries or pomegranate seeds

 

Dried cranberries

 

Chopped pistachios or walnuts

 

Orange zest

 

Drizzle of honey

 

Directions

 

Make Chia Base: In a jar, whisk together milk, chia seeds, vanilla, cinnamon, and sweetener. Stir well and refrigerate 2–3 hours or overnight until thickened.

 

Ricotta Layer: In a bowl, mix ricotta, honey/maple, vanilla, and orange zest until smooth and creamy.

 

Assemble: In serving glasses, layer chia pudding first, then a generous layer of ricotta cream.

 

Decorate Festively: Top with cranberries/pomegranate, dried cranberries, nuts, and a drizzle of honey.

 

Chill & Serve: Refrigerate 20 minutes before serving for best texture.
