Chef’s Notes & Tips

Don’t like arugula? Use spinach or mixed greens.

For more protein: add grilled chicken, shrimp, or chickpeas.

Make it creamier: add a spoon of Greek yogurt to the dressing.

Make ahead: prepare dressing and chop vegetables separately; assemble before serving.
