Creamy Shrimp and Avocado Salad

Ingredients:

1 lb (450 g) large shrimp, peeled & deveined

2 ripe avocados, diced

1/4 cup red onion, finely chopped

2 tbsp fresh cilantro, chopped

1 tbsp lime juice

Salt & black pepper, to taste

For the Creamy Dressing:

1/3 cup sour cream or Greek yogurt

 

2 tbsp mayonnaise

 

1 tbsp lime juice

 

1 clove garlic, minced

 

Salt & pepper, to taste

 

Instructions:

 

Cook the Shrimp

 

Boil or sauté shrimp for 2–3 minutes until pink and opaque. Drain and let cool.

 

Prepare the Dressing

 

In a small bowl, whisk together sour cream, mayo, lime juice, garlic, salt, and pepper.

 

Assemble the Salad

 

In a large bowl, combine shrimp, avocado cubes, red onion, and cilantro.

 

Gently toss with the creamy dressing until evenly coated.

 

Serve

 

Chill for 15–20 minutes for best flavor.

 

Garnish with extra cilantro and a squeeze of lime
