Garlic Herb Chicken & Veggie Stir-Fry with Brown Rice Blend
A wholesome, protein-rich bowl loaded with tender chicken, crisp veggies, and a hearty brown rice–quinoa blend. It’s flavorful, colorful, and perfect for meal prep or a nourishing lunch/dinner!
For the Chicken & Veggies
1 chicken breast, cut into cubes
1 cup green beans
1 cup broccoli florets
1 red bell pepper, sliced
1 medium carrot, cut into sticks
1–2 tbsp olive oil
2 garlic cloves, minced
1/2 tsp paprika
1/2 tsp dried thyme or parsley
Salt & pepper to taste
Optional: a splash of soy sauce or lemon juice
For the Grain Mix
1 cup cooked brown rice
1/4 cup cooked quinoa (optional but recommended)
1 tsp olive oil
Pinch of salt
Cook the Chicken
Season chicken with salt, pepper, paprika, and thyme.
Heat a pan with olive oil.
Add chicken cubes and cook 5–7 minutes until golden and cooked through.
Sauté the Veggies
In the same pan, add a drizzle more oil if needed.
Add garlic, cook 30 seconds.
Add carrots, green beans, broccoli, and bell pepper.
Sauté 5–7 minutes until tender-crisp.
Season to taste and add optional soy sauce or lemon juice.
Prepare the Rice Blend
Mix cooked brown rice and quinoa with olive oil and a pinch of salt.
Warm in a pan or microwave.
Assemble the Bowl
Add the rice blend to one side of the plate.
Add the chicken and veggie stir-fry to the other.
Serve warm and enjoy your nourishing, balanced meal!
