Puff Pastry Egg Tarts with Veggies

Flaky puff pastry shells filled with a creamy egg custard and loaded with colorful vegetables. These tarts are perfect for breakfast, brunch, or as a light appetizer. You can make them ahead and serve warm or at room temperature.

 Ingredients 

For the Tarts

1 sheet puff pastry (store-bought, thawed)

3 large eggs

¼ cup milk or cream

¼ tsp salt

¼ tsp black pepper

½ tsp dried oregano or thyme

For the Veggie Filling

¼ cup bell peppers, finely diced (any color)

¼ cup zucchini, finely diced

2 tbsp onion, finely diced

2 tbsp cherry tomatoes, chopped

2 tbsp spinach, chopped

2 tbsp feta cheese, crumbled

1 tsp olive oil

 Instructions

1. Prepare the Puff Pastry

Preheat oven to 200°C (390°F).

Roll out puff pastry on a lightly floured surface.

Cut into 6 equal squares and place on a baking tray lined with parchment paper.

Lightly prick the center of each square with a fork to prevent puffing in the center.

2. Prepare the Veggies

Heat olive oil in a pan over medium heat.

Saute onion, bell peppers, and zucchini for 2–3 minutes until slightly softened.

Add cherry tomatoes and spinach, cook 1–2 more minutes.

Remove from heat and let cool slightly.

3. Make the Egg Mixture

In a bowl, whisk together eggs, milk or cream, salt, pepper, and dried oregano/thyme.

4. Assemble the Tarts

Evenly distribute sautéed vegetables over the puff pastry squares.

Sprinkle crumbled feta on top, if using.

Pour egg mixture over the veggies, filling about ¾ of each pastry square.

5. Bake

Bake in preheated oven for 20–25 minutes or until puff pastry is golden and eggs are set.

Remove from oven and cool slightly before serving.
