Instructions
1. Preheat Oven
Preheat to 200°C (400°F).
Line a baking tray with parchment paper.
2. Prep the Brussels Sprouts
Toss halved Brussels sprouts with olive oil, salt, and pepper.
Spread cut-side down on the tray for maximum crispiness.
3. Roast
Roast for 20–22 minutes, shaking the tray halfway.
Brussels sprouts should be tender inside and slightly charred outside.
4. Make the Honey-Balsamic Glaze
1. In a small saucepan, combine balsamic vinegar, honey, Dijon (if using), and garlic.
2. Simmer on low heat 2–3 minutes until slightly thickened.
5. Toss & Finish
Drizzle glaze over roasted Brussels sprouts.
Toss gently to coat evenly.
Return to oven for 2–3 minutes to set the glaze.
6. Serve
Garnish with chopped parsley, toasted nuts, or pomegranate seeds for a Mediterranean touch.
Notes & Tips
Extra crispiness: Don’t overcrowd the pan. Spread sprouts in a single layer.
Make it vegan: Replace honey with maple syrup.
Add flavor: Sprinkle a pinch of smoked paprika or chili flakes if you like a subtle kick.
Meal prep: Store in an airtight container for up to 2 days. Reheat in the oven to restore crispiness.
