Chewy, spiced energy balls with pumpkin puree, oats, nuts, and warm pumpkin pie spices.Naturally sweetened with dates and honey or maple syrup, they are perfect for a festive snack or holiday dessert without guilt.

Ingredients

1 cup rolled oats

½ cup pumpkin puree

½ cup pitted dates

¼ cup almond butter or peanut butter

1 tsp cinnamon

½ tsp nutmeg

½ tsp ginger powder

1 tsp vanilla extract

Pinch of salt

Optional: 2 tbsp chopped walnuts or pecans

Instructions

1. Prepare the mixture

In a food processor, blend dates until smooth.

Add pumpkin puree, almond butter, vanilla, and spices → blend until combined.

Transfer to a bowl and stir in oats and optional nuts.

2. Form energy balls

Scoop ~1–2 tbsp of mixture and roll into balls.

Place on a parchment-lined tray.

3. Chill

Refrigerate for 20–30 minutes until firm.

4. Serve

Store in an airtight container in the fridge for up to 1 week.

Optional: roll in shredded coconut, cinnamon, or cocoa powder for extra flavor.
