Ingredients
For the skewers
1 block firm tofu (14 oz / 400 g), pressed and cut into 1-inch cubes
1 cup fresh pineapple chunks
1 red bell pepper, cut into 1-inch pieces
1 yellow bell pepper, cut into 1-inch pieces
2 tbsp olive oil
1 tbsp soy sauce or tamari
1 tbsp lemon juice
1 garlic clove, minced
1 tsp dried oregano
Salt & black pepper, to taste
Bamboo skewers, soaked in water 20 minutes
Instructions
1. Marinate the tofu
In a bowl, whisk olive oil, lemon juice, soy sauce, garlic, oregano, salt, and pepper.
Toss tofu cubes in marinade and let sit 20–30 minutes.
2. Assemble the skewers
Thread tofu, pineapple, and bell peppers alternately onto skewers.
Brush lightly with remaining marinade.
3. Cook
Option 1 – Oven:
Preheat oven to 400°F (200°C).
Place skewers on a parchment-lined tray.
Bake 15–20 minutes, turning halfway, until tofu is lightly golden and vegetables are tender.
Option 2 – Grill / Air-Fryer:
Grill skewers 10–12 minutes, turning occasionally, until charred lightly.
Air-fry at 390°F (200°C) for 12–15 minutes.
4. Serve
Plate skewers and garnish with fresh parsley or cilantro.
Optional: drizzle with a little tahini-lemon sauce or Greek yogurt for extra Mediterranean flavor.
Tips
Add red onion or zucchini chunks for more color and veggies.
For extra sweetness, glaze lightly with honey or maple syrup before baking.
Serve as a starter, side, or part of a festive holiday platter.
