Chickpea & Feta Wrap with Veggies & Yogurt Sauce
Ingredients
For the Wraps
2 large tortillas or flatbreads
1 can (400g) chickpeas, drained & rinsed
½ cup crumbled feta
1 small cucumber, diced
1 tomato, diced
1 small red onion, thinly sliced
1 cup shredded lettuce or spinach
1 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
½ tsp cumin
Salt & pepper to taste
Yogurt Sauce
½ cup Greek yogurt
1 tbsp lemon juice
1 tbsp olive oil
1 small garlic clove, minced
Salt & pepper to taste
1 tbsp chopped fresh dill or parsley
Directions
Prep the Chickpeas
Heat olive oil in a skillet over medium heat.
Add chickpeas, smoked paprika, garlic powder, cumin, salt, and pepper.
Sauté 5–7 minutes until warm, lightly crispy, and coated in spices.
Make the Yogurt Sauce
Mix Greek yogurt, lemon juice, olive oil, garlic, salt, pepper, and fresh herbs in a small bowl. Set aside.
Assemble the Wraps
Warm the tortillas or flatbreads.
Spread a generous layer of the yogurt sauce.
Add shredded lettuce or spinach.
Top with chickpeas, cucumber, tomato, and red onion.
Sprinkle crumbled feta on top.
Roll tightly into a wrap and slice if desired.
