Sweet Potato Rounds with Brie, Walnuts & Cranberry-Honey Glaze

Ingredients:

2 large sweet potatoes, sliced into 1 cm rounds

2 tbsp olive oil

Salt and pepper, to taste

150g Brie cheese, cut into small pieces

1/3 cup walnuts, toasted and chopped

1/2 cup fresh cranberries

2 tbsp honey

 

1 tbsp orange juice

 

Optional: fresh thyme for garnish

 

Directions:

 

Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.

 

Toss sweet potato rounds with olive oil, salt, and pepper. Arrange in a single layer and bake for 20–25 minutes, flipping halfway through.

 

Meanwhile, make the cranberry-honey glaze: in a small saucepan, heat cranberries, honey, and orange juice over medium heat until cranberries burst and the mixture thickens slightly.

 

Remove sweet potatoes from the oven and top each round with a piece of Brie. Return to the oven for 3–4 minutes until melted.

 

Sprinkle toasted walnuts over the melted Brie and drizzle with the cranberry-honey glaze.

 

Garnish with fresh thyme if desired and serve warm.
