Greek Chicken Souvlaki Bowls with Garlic Sauce

Ingredients

For the Chicken Souvlaki

500g chicken breast, cut into cubes

2 tbsp olive oil

2 tbsp lemon juice

1 tbsp Greek yogurt

3 garlic cloves, minced

1 tsp dried oregano

 

½ tsp paprika

 

½ tsp salt

 

¼ tsp black pepper

 

For the Garlic Sauce

 

½ cup Greek yogurt

 

1 garlic clove, finely grated

 

1 tbsp lemon juice

 

1 tbsp olive oil

 

Salt & pepper to taste

 

For the Bowls

 

1 cup cooked rice or couscous

 

1 cup chopped cucumbers

 

1 cup cherry tomatoes, halved

 

½ red onion, thinly sliced

 

½ cup crumbled feta

 

¼ cup kalamata olives (optional)

 

Fresh parsley for garnish

 

Lemon wedges for serving

 

Directions

Marinate the Chicken

 

In a bowl, mix olive oil, lemon juice, yogurt, garlic, oregano, paprika, salt, and pepper.

 

Add chicken cubes and toss to coat.

 

Marinate at least 30 minutes, or up to 4 hours for best flavor.

 

Cook the Chicken

 

Heat a skillet or grill pan over medium-high heat.

 

Cook chicken for 8–10 minutes, turning occasionally, until golden and fully cooked.

 

Prepare the Garlic Sauce

 

Mix Greek yogurt, garlic, lemon juice, olive oil, salt, and pepper until smooth.

 

Refrigerate while assembling.

 

Assemble the Bowls

 

Add rice or couscous to each bowl.

 

Top with chicken souvlaki, cucumbers, tomatoes, red onion, feta, and olives.

 

Drizzle generous garlic sauce on top.

 

Garnish with parsley and add lemon wedges.
