🛒 Ingredients
For the Salad
1 cup couscous
1 cup hot vegetable stock or water
200 g halloumi cheese, sliced
½ cup pomegranate seeds
½ small red onion, very finely chopped
½ cup cucumber, diced (optional but fresh)
2 tbsp olive oil (for frying halloumi)
For the Mint Dressing
¼ cup fresh mint leaves, finely chopped
2 tbsp fresh lemon juice
3 tbsp extra-virgin olive oil
1 tsp honey or maple syrup
Salt, to taste
Freshly ground black pepper

1. Prepare the Couscous
Place couscous in a bowl.
Pour over hot stock or water.
Cover and let sit for 5 minutes.
Fluff gently with a fork and let cool slightly.
2. Cook the Halloumi
Heat olive oil in a pan over medium heat.
Fry halloumi slices 2–3 minutes per side until golden and crisp.
Remove and cut into bite-size pieces.
3. Make the Mint Dressing
In a small bowl, whisk mint, lemon juice, olive oil, honey, salt, and pepper.
4. Assemble the Salad
In a large bowl, combine couscous, red onion, cucumber, and pomegranate seeds.
Add warm halloumi.
Drizzle with mint dressing and toss gently.
5. Serve
Taste and adjust seasoning.
Serve warm or at room temperature.
