2 large leeks, cleaned well and sliced into rings
3 tbsp olive oil
3 cloves garlic, finely chopped

Zest of ½ lemon
2 tbsp lemon juice
½ cup chicken stock
¼ cup cooking cream or Greek yogurt (optional for creamy version)

1. Prepare the Leeks
Slice leeks and rinse well to remove any dirt.
Drain and set aside.
2. Brown the Chicken
Heat 2 tbsp olive oil in a wide pan over medium heat.
Season chicken with salt and pepper.
Cook 4–5 minutes per side until lightly golden.
Remove chicken and set aside.
3. Cook the Leeks
In the same pan, add remaining olive oil.
Add leeks and cook gently for 6–8 minutes until soft and sweet (not browned).
Stir in garlic and cook for 30 seconds.
4. Build the Flavor
Add tarragon, lemon zest, lemon juice, and chicken stock.
Return chicken to the pan.
5. Simmer
Cover and simmer on low heat for 15–18 minutes until chicken is cooked through and tender.
