What You’ll Need
For the Chicken:
2 boneless chicken breasts
1 tbsp olive oil
1/2 tsp smoked paprika
1/2 tsp garlic granules
Salt and cracked pepper
Juice of 1/2 lime
Fresh chopped cilantro, for topping
For the Sweet Potato Fries:
2 medium sweet potatoes, cut into thick fries
1 tbsp olive oil
1/2 tsp ground cumin
1/2 tsp sweet paprika
Salt & pepper
For the Avocado Salad:
1 ripe avocado, diced
1/2 cup cherry tomatoes, halved
1/4 small red onion, finely chopped
1 tbsp lime juice
1 tbsp chopped fresh cilantro

Preheat Oven: Set oven to 425°F (220°C).
Roast the Sweet Potatoes: Toss fries with oil, cumin, paprika, salt, and pepper. Spread on a lined baking tray and bake for 25 minutes, flipping halfway for even crispiness.
Prepare the Chicken: Rub the chicken breasts with oil, lime juice, garlic granules, paprika, salt, and pepper.
Grill the Chicken: Heat a grill pan or skillet. Cook the chicken 5–6 minutes per side until nicely charred and cooked through. Let rest, then slice into strips.
Mix the Avocado Salad: Combine avocado, tomatoes, red onion, lime juice, and cilantro. Season with salt and gently stir.
Assemble Your Bowl: Add a generous handful of sweet potato fries, lay down the grilled chicken slices, and spoon over the fresh avocado salad. Sprinkle with extra cilantro.
