Grilled Chicken in Garlic Cream Sauce with Rice & Veg

You’ll Need:

Chicken & Sauce:

2 chicken breasts

1 tbsp olive oil

Salt and pepper

1 tbsp

2 minced garlic cloves

½ cup cream

 

1 tsp Dijon mustard

 

1 tbsp chopped parsley

 

Splash of lemon juice

 

Sides:

 

⅔ cup rice

 

200g green beans

 

½ red pepper, diced

 

Optional: butter for beans

 

Method:

 

Cook rice and keep warm.

 

Boil beans for 3–4 minutes, drain and toss with red pepper and butter.

 

Cook chicken until golden and done. Rest and slice.

 

Creamy sauce time: In the same pan, melt butter, cook garlic, then add cream, mustard, lemon, and herbs. Simmer until smooth.

 

Plate it up: Serve sliced chicken over rice, drizzle with sauce, and add the veggie side.
