Bake: 35–40 minutes

Total: ~70 minutes

🧺 Ingredients

Base

4–5 buttery croissants, slightly stale or fresh, cut into large cubes

Vegetables

2 cups fresh spinach, chopped

1 small onion, finely chopped

1 clove garlic, minced

1 tbsp olive oil

Cheese

½ cup feta cheese, crumbled

1 cup Gruyere cheese, shredded

Egg Custard

6 eggs

1½ cups milk (or cream for extra richness)

½ tsp salt

¼ tsp black pepper

¼ tsp nutmeg (optional, for warmth)

🍽️ Instructions

Step 1: Prep the Croissants

Cut croissants into cubes and place in a lightly greased baking dish.

Step 2: Cook Spinach

Heat olive oil in a pan. Sauté onion until soft, add garlic, then spinach until wilted. Let cool slightly.

Step 3: Assemble Strata

Sprinkle feta and Gruyere over croissant cubes.

Evenly layer sautéed spinach and onions.

Repeat if needed for extra layers.

Step 4: Make Custard

Whisk eggs, milk, salt, pepper, and nutmeg.

Pour evenly over croissant mixture, pressing lightly so the bread absorbs the liquid.

Let soak 10 minutes (or refrigerate overnight for make-ahead).

Step 5: Bake

Preheat oven to 180°C (350°F).

Bake uncovered for 35–40 minutes until puffed, golden, and set in the center.

Step 6: Serve

Cool 5 minutes, slice, and serve warm.

💡 Tips

Use slightly stale croissants — they hold up better to custard.

Make ahead: assemble the night before and bake fresh in the morning.

Add herbs like thyme or chives for extra flavor

Can add mushrooms or roasted red peppers for variation.
