2 cups Brussels sprouts, trimmed & halved
1 large sweet potato, peeled & diced into cubes
2 tbsp olive oil
1 tsp salt (or to taste)
½ tsp black pepper
½ tsp smoked paprika (or regular paprika)
½ tsp garlic powder
1 tsp dried thyme or rosemary
120–150 g Brie cheese, rind on, cut into cubes
1 tbsp honey or maple syrup (optional, for festive sweetness)
1 tbsp chopped walnuts or pecans (optional, for crunch)
Fresh thyme or parsley for garnish
Instructions
Roast the Sweet Potatoes
Heat a large skillet (cast iron works best) over medium heat.
Add 1 tbsp olive oil and toss in the diced sweet potatoes.
Season with salt, pepper, paprika, and garlic powder.
Cook for 10–12 minutes, stirring occasionally, until golden and just tender.
Add Brussels Sprouts
Push the sweet potatoes to one side of the skillet.
Add the remaining 1 tbsp olive oil, then place the Brussels sprouts cut-side down.
Sprinkle with thyme or rosemary.
Cook for 8–10 minutes, letting them caramelize and turn lightly crispy.
Combine & Glaze
Gently toss everything together in the skillet.
Drizzle with honey or maple syrup if using, and cook for 2 more minutes to glaze and deepen flavors.
Add Brie Cubes
Turn the heat to low.
Scatter the Brie cubes evenly over the skillet.
Cover for 2–3 minutes, just until the Brie softens and turns irresistibly creamy (do not stir).
Finish & Serve
Remove from heat.
Top with chopped nuts and fresh herbs.
