Pistachio-Crusted Halloumi with Honey and Thyme
Ingredients
Halloumi
250 g halloumi cheese, sliced into 1 cm slabs
½ cup shelled pistachios, finely chopped
2 tbsp breadcrumbs (panko or fine crumbs)
1 tsp fresh thyme leaves (plus extra for garnish)
1 large egg
2 tbsp all-purpose flour
Freshly cracked black pepper, to taste
For Cooking
2–3 tbsp olive oil or butter
To Finish
2–3 tbsp honey
Lemon wedges (optional, for serving)
Directions
Pat halloumi slices dry with paper towels.
Set up a breading station:
Bowl 1: flour with black pepper
Bowl 2: beaten egg
Bowl 3: chopped pistachios mixed with breadcrumbs and thyme
Lightly coat each halloumi slice in flour, dip into egg, then press firmly into pistachio mixture to fully coat.
Heat olive oil or butter in a skillet over medium heat.
Pan-fry halloumi for 2–3 minutes per side, until golden brown and crisp.
Transfer to a serving plate, drizzle generously with warm honey, and sprinkle with extra thyme.
Serve immediately with lemon wedges if desired.
