Mediterranean Chicken Skewers with Mezze Spread

Ingredients

Chicken Skewers

500 g boneless, skinless chicken breast or thigh, cut into cubes

3 tbsp olive oil

2 cloves garlic, minced

1 tsp dried oregano

1 tsp ground cumin

1 tsp smoked paprika

Salt and freshly cracked black pepper, to taste

Juice of 1 lemon

 

Mezze Spread

 

½ cup hummus

 

½ cup tzatziki sauce

 

½ cup roasted red peppers, sliced

 

¼ cup Kalamata olives, pitted

 

1 small cucumber, sliced

 

1 small tomato, diced

 

Fresh parsley, chopped, for garnish

 

Pita bread or flatbreads, to serve

 

Directions

 

In a bowl, combine olive oil, garlic, oregano, cumin, paprika, lemon juice, salt, and pepper. Add chicken cubes and toss to coat. Marinate for 30 minutes to 2 hours.

 

Preheat a grill or grill pan over medium-high heat. Thread chicken onto skewers.

 

Grill chicken skewers for 4–5 minutes per side, until fully cooked and lightly charred.

 

Arrange mezze spread components on a platter: hummus, tzatziki, roasted peppers, olives, cucumber, tomato, and fresh parsley.

 

Serve grilled chicken skewers alongside the mezze spread with warm pita bread.
