Marry Me Chicken Soup
Ingredients
2 tbsp olive oil
1 medium onion, finely diced
3 cloves garlic, minced
500 g chicken breast, diced (halal)
Salt and freshly cracked black pepper, to taste
1 tsp dried oregano
1 tsp dried basil
½ ts chili flakes (optional)
½ tsp paprika
⅓ cup sun-dried tomatoes, sliced (oil-packed, drained)
1 tbsp tomato paste
4 cups chicken broth (halal, alcohol-free)
1 cup heavy cream
½ cup grated Parmesan cheese
1 cup baby spinach
1 tsp lemon juice (optional, for balance)
Fresh basil or parsley, chopped (for garnish)
Directions
Heat olive oil in a large pot over medium heat. Add onion and sauté until soft and translucent.
Stir in garlic and cook for 30 seconds until fragrant.
Add diced chicken, season with salt, pepper, oregano, basil, paprika, and chili flakes. Cook until lightly golden.
Stir in sun-dried tomatoes and tomato paste; cook for 1–2 minutes to deepen flavor.
Pour in chicken broth and bring to a gentle simmer. Cook for 12–15 minutes, until chicken is tender.
Lower heat and stir in heavy cream and Parmesan cheese until fully melted and creamy.
Add spinach and cook just until wilted.
Finish with lemon juice if desired. Taste and adjust seasoning.
Serve hot, garnished with fresh herbs and extra Parmesan if desired.
