Mint Cookies
Soft-on-the-inside, lightly crisp mint cookies flavored with fresh or dried mint and a hint of lemon.
These cookies feel refreshing after heavy holiday meals and are perfect with tea or coffee.

Ingredients
1½ cups all-purpose flour (or half whole wheat)
½ tsp baking powder
Pinch of salt
½ cup olive oil
½ cup powdered sugar
1 egg
1 tsp vanilla extract
1 tbsp fresh mint, finely choppe
Zest of ½ lemon
Optional: powdered sugar for dusting
Instructions
1. Preheat
Preheat oven to 350°F (180°C).
Line a baking tray with parchment paper.
2. Mix wet ingredients
In a bowl, whisk olive oil/butter with powdered sugar until smooth.
Add egg, vanilla, mint, and lemon zest. Mix well.
3. Add dry ingredients
Sift in flour, baking powder, and salt.
Mix gently until a soft dough forms.
4. Shape
Roll dough into small balls (about 1 tbsp each).
Place on tray and flatten slightly.
5. Bake
Bake 12–15 minutes until bottoms are lightly golden.
Do not overbake — cookies should stay pale.
6. Finish
Cool completely.
Dust lightly with powdered sugar if desired.
Tips & Variations
Dip half the cookie in dark chocolate for a festive touch.
Add crushed pistachios on top for Mediterranean flair.
For extra freshness, add a drop of peppermint extract.
Store in an airtight container for up to 1 week.
