Beautiful Fattoush Salad
Fattoush is a bright Lebanese salad made with crisp vegetables, fragrant herbs, tangy sumac, and crunchy toasted pita.
It’s light yet satisfying, incredibly refreshing, and looks stunning on a December or summer table alike.

Ingredients
Salad
2 cups romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 small cucumber, diced
½ red bell pepper, diced
2 radishes, thinly sliced
2 green onions, sliced
¼ cup fresh parsley, chopped
2 tbsp fresh mint, chopped
Crispy Pita
1 large whole-wheat pita bread
1 tbsp olive oil
Pinch of salt
Fattoush Dressing
3 tbsp olive oil
1½ tbsp lemon juice
1 tsp sumac
1 small garlic clove, minced
Salt & black pepper, to taste
Optional: 1 tsp pomegranate molasses
Instructions
1. Make crispy pita
Tear pita into bite-size pieces.
Toss with olive oil and salt.
Bake at 375°F (190°C) for 5–7 minutes or pan-toast until golden and crisp.
2. Prepare dressing
Whisk olive oil, lemon juice, sumac, garlic, salt, pepper, and pomegranate molasses.
3. Assemble salad
In a large bowl, combine all vegetables and herbs.
Add crispy pita just before serving.
Drizzle dressing and toss gently.
4. Serve
Finish with extra sumac and fresh mint leaves.
Serve immediately for best crunch.

Keep pita separate until serving.
