Green Olive Dip

A smooth, savory dip made with green olives, olive oil, garlic, lemon, and herbs.
Perfect as a mezze, appetizer, or spread for bread, crackers, or grilled vegetables — simple but full of Mediterranean character.

Ingredients 

1 cup pitted green olives (Castelvetrano or Spanish)

2 tbsp olive oil

1 small garlic clove

1 tbsp lemon juice

1 tbsp fresh parsley or basil

½ tsp dried oregano or thyme

Black pepper, to taste

Optional: pinch of chili flakes or lemon zest

Instructions

1. Blend

Add olives, olive oil, garlic, lemon juice, herbs, and pepper to a food processor.

Pulse until coarse or smooth, as preferred.

2. Adjust

Taste and adjust lemon, oil, or herbs.

Add chili flakes if desired.

3. Serve

Transfer to a bowl.

Drizzle with extra olive oil and sprinkle herbs on top.

Tips & Variations

Add capers or anchovies for extra umami (non-vegan).

Mix in toasted almonds or walnuts for texture.

Swirl in Greek yogurt for a creamy version.

Serve with warm pita, sourdough, or veggie sticks.
