Ingredients 

1 sheet puff pastry

3–4 ripe tomatoes, thinly sliced

½ cup shredded mozzarella or goat cheese

2 tbsp olive oil

1 garlic clove, minced

1 tsp dried oregano or thyme

8–10 fresh basil leaves, sliced or torn

Salt & black pepper, to taste

Optional: balsamic glaze for drizzling

Instructions

1. Preheat oven

Preheat oven to 400°F (200°C).

Line a baking sheet with parchment paper.

2. Prepare pastry

Roll out puff pastry slightly.

Score a 1-inch border around the edge to create a crust (optional).

Place on baking sheet.

3. Assemble tart

Brush olive oil and garlic over the pastry.

Sprinkle cheese evenly over the center.

Layer tomato slices on top.

Season with oregano, salt, and pepper.

4. Bake

Bake 20–25 minutes, until pastry is puffed and golden.

Remove from oven and let cool slightly.

5. Finish

Top with fresh basil leaves.

Optional: drizzle lightly with balsamic glaze.

Slice and serve warm or at room temperature.
