Ingredients
1 sheet puff pastry, thawed
2 tbsp olive oil
250 g (9 oz) mushrooms (button, cremini, or mixed), finely chopped
1 small onion or 2 shallots, finely diced
2 cloves garlic, minced
1 tsp fresh thyme (or ½ tsp dried)
Salt & black pepper, to taste
120–150 g (4–5 oz) brie cheese, rind removed, cubed
1 egg, beaten (for egg wash)
Optional garnish: fresh thyme leaves or chopped parsley
Instructions
1. Caramelize the Mushrooms
Heat olive oil or butter in a skillet over medium heat. Add onions and cook for 3–4 minutes until soft. Add mushrooms and cook for 8–10 minutes, stirring occasionally, until moisture evaporates and mushrooms turn golden brown. Stir in garlic, thyme, salt, and pepper; cook 1 more minute. Remove from heat and let cool slightly.
2. Prepare the Puff Pastry
Preheat oven to 200°C (400°F). Line a baking tray with parchment paper. Roll out puff pastry slightly and cut into 12–16 equal squares.
3. Assemble the Pull-Apart
Place half of the pastry squares on the baking tray, slightly overlapping in a circular or clustered pattern. Spoon mushroom mixture onto each square and top with brie cubes. Cover with remaining pastry squares, gently pressing edges together.
4. Brush & Bake
Brush the top generously with egg wash. Bake for 25–30 minutes, or until puffed, deep golden, and crisp.
