Cheesy Zucchini Bread

Moist zucchini bread with melted cheese and herbs, lightly golden on top and fluffy inside.It’s comforting yet light, perfect for December gatherings, soup sides, or snack trays.

Ingredients 

1½ cups zucchini, grated & squeezed dry

1 cup shredded cheese (cheddar, mozzarella, or mix)

2 large eggs

½ cup Greek yogurt or milk

¼ cup olive oil

1¾ cups all-purpose flour (or half whole-wheat)

1½ tsp baking powder

½ tsp baking soda

½ tsp salt

¼ tsp black pepper

1 tsp dried oregano or thyme

Optional: 2 tbsp grated Parmesan for topping

Instructions

1. Prep

Preheat oven to 350°F (175°C).

Grease or line a loaf pan.

2. Mix wet ingredients

Whisk eggs, yogurt, and olive oil until smooth.

Stir in grated zucchini.

3. Mix dry ingredients

In another bowl, combine flour, baking powder, baking soda, salt, pepper, and herbs.

4. Combine

Fold dry ingredients into wet mixture.

Gently mix in shredded cheese.

5. Bake

Pour batter into loaf pan.

Sprinkle Parmesan on top (optional).

Bake 45–50 minutes until golden and a toothpick comes out clean.

6. Cool & serve

Cool 10 minutes before slicing.

Serve warm or at room temperature.

Tips & Variations

Add chopped olives or sun-dried tomatoes for Mediterranean flair.

Make muffins instead (20–25 minutes bake time).

Use feta + mozzarella for lighter flavor.

Delicious with soups, salads, or as a snack.
