Ingredients 

Bread

1 large round sourdough or crusty artisan loaf

Spinach Artichoke Filling

1 cup frozen spinach, thawed & squeezed dry

¾ cup canned artichoke hearts, finely chopped

4 oz (115 g) cream cheese, softened

½ cup Greek yogurt or sour cream

1 cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

2 garlic cloves, minced

Salt & black pepper, to taste

Topping

1 tbsp olive oil or melted butter

1 tbsp fresh parsley, chopped

Instructions

1. Preheat oven

Preheat to 375°F (190°C).

Line a baking tray with foil or parchment.

2. Prepare bread

Using a sharp knife, cut the loaf in a crosshatch pattern (1-inch spacing), cutting almost through but not all the way.

3. Make filling

In a bowl, mix spinach, artichokes, cream cheese, Greek yogurt, mozzarella, Parmesan, garlic, salt, and pepper.

4. Fill bread

Gently open the cuts and stuff filling deep into the bread.

Brush top with olive oil or butter.

5. Bake

Wrap loosely with foil and bake 15 minutes.

Uncover and bake another 10–15 minutes until golden and bubbly.

6. Serve

Sprinkle with parsley.

Serve warm and pull apart to enjoy.
