A fluffy, savory casserole packed with spinach, tangy feta, eggs, and olive oil.Inspired by Greek flavors, it’s satisfying without being heavy and ideal for diet-conscious eating.

Ingredients

8 large eggs

½ cup milk or unsweetened almond milk

1½ cups fresh spinach, chopped (or frozen, thawed & squeezed)

¾ cup crumbled feta cheese

¼ cup finely chopped onion or scallions

2 tbsp olive oil

½ tsp salt

¼ tsp black pepper

Optional: ½ tsp dried oregano or Dill

Optional add-ins: cherry tomatoes, mushrooms, or bell peppers

 Instructions

1. Preheat oven

Preheat to 375°F (190°C).

Lightly grease a baking dish.

2. Whisk eggs

In a bowl, whisk eggs, milk, olive oil, salt, pepper, and oregano/dill.

3. Assemble

Spread spinach and onion evenly in dish.

Sprinkle feta over vegetables.

Pour egg mixture evenly on top.

4. Bake

Bake uncovered for 30–35 minutes, until center is just set and lightly golden.

5. Serve

Cool 5 minutes, slice, and serve warm or room temperature.
