Mediterranean Zucchini Bake with Olive & Feta

Tender baked zucchini layered with briny olives, creamy feta, herbs, and olive oil.Inspired by Greek flavors, it’s simple, wholesome, and ideal for diet-conscious meals.

 Ingredients

3 medium zucchini, sliced into rounds or half-moons

2 tbsp extra-virgin olive oil

2 garlic cloves, minced

½ cup cherry tomatoes, halved (optional)

⅓ cup Kalamata or green olives, sliced

¾ cup crumbled feta cheese

½ tsp dried oregano

¼ tsp black pepper

Optional: fresh basil or parsley for garnish

 Instructions

1. Preheat oven

Preheat to 400°F (200°C).

Lightly grease a baking dish.

2. Toss zucchini

In a bowl, toss zucchini with olive oil, garlic, oregano, and pepper.

3. Assemble

Spread zucchini evenly in dish.

Scatter olives and cherry tomatoes on top.

Sprinkle feta evenly over everything.

4. Bake

Bake uncovered for 30–35 minutes, until zucchini is tender and feta is lightly golden.

5. Serve

Garnish with fresh herbs.

Serve warm or at room temperature.
