½ cup Greek yogurt or mayonnaise
1 tbsp lemon juice
1 clove garlic, minced
1 tbsp olive oil

For Assembly
4 large tortillas or flatbreads
1 cup lettuce or mixed greens
½ cup shredded cheese (optional: mozzarella, cheddar, or feta)
Instructions
Prepare the Vegetables
In a large bowl, toss zucchini, bell peppers, onion, and mushrooms with olive oil, garlic powder, smoked paprika, salt, and pepper until evenly coated.
Grill the Vegetables
Heat a grill pan or outdoor grill over medium-high heat. Grill the vegetables for 3–4 minutes per side until tender and lightly charred. Remove and set aside.
Make the Sauce
In a small bowl, mix Greek yogurt (or mayo), lemon juice, garlic, olive oil, salt, and pepper until smooth and creamy.
Warm the Wraps
Lightly warm the tortillas on a dry pan or grill for about 30 seconds per side to make them pliable.
