🥘 Ingredients

Slow Cooker Filling

500–700 g (1–1½ lb) boneless, skinless chicken breast

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

1 cup zucchini, sliced

1 cup canned diced tomatoes (no added sugar)

2 cloves garlic, minced

1 tbsp olive oiL

1 tsp smoked paprika

1 tsp ground cumin

½ tsp oregano

½ tsp salt

¼ tsp black pepper

Juice of 1 lime

For Serving

Corn or whole-grain tortillas

Shredded lettuce or cabbage

Chopped tomatoes

Fresh cilantro

Greek yogurt or avocado slices

🧑‍🍳 Instructions

1. Add to slow cooker

Place chicken breasts at the bottom.

Add bell peppers, onion, zucchini, tomatoes, garlic, olive oil, spices, and lime juice.

2. Cook

Cover and cook:

LOW: 4–6 hours

HIGH: 2½–3 hours

3. Shred

Remove chicken, shred with two forks, and return to slow cooker

Stir to coat chicken with juices and vegetables.

4. Serve

Spoon mixture into warm tortillas.
