🥘 Ingredients
2 bunches broccolini, trimmed
1½ cups cooked cannellini or butter beans
2 shallots, thinly sliced
3 tbsp extra-virgin olive oil (divided)
2 garlic cloves, sliced
Zest & juice of ½ lemon
½ tsp salt
¼ tsp black pepper
Optional: pinch of red pepper flakes (very mild)
🧑🍳 Instructions
1. Crispy shallots
Heat 2 tbsp olive oil in a skillet over medium-low heat.
Add shallots and cook slowly 6–8 minutes, stirring often, until golden and crisp.
Remove and drain on paper towel.
2. Cook broccolini
In same pan, add remaining olive oil and garlic.
Add broccolini and sauté 4–5 minutes until tender-crisp.
Add a splash of water, cover briefly if needed.
3. Add beans
Stir in beans, lemon zest, juice, salt, and pepper.
Warm 2–3 minutes, gently tossing.
4. Finish
Transfer to serving platter.
Top generously with crispy shallots.
