🥘 Ingredients

Beans

2 cups cooked cannellini or butter beans (or 2 cans, rinsed & drained)

1 tbsp olive oil

1 garlic clove, sliced

Green Goddess Pistachio Pesto

½ cup fresh parsley

¼ cup fresh basil

2 tbsp fresh chives

⅓ cup shelled pistachios (unsalted)

2 tbsp olive oil

2 tbsp lemon juice

1 small garlic clove

2–3 tbsp cold water (to thin)

Salt & black pepper to taste

Optional Garnish

Extra chopped pistachios

Lemon zest

Chili flakes (optional, very mild)

🧑‍🍳 Instructions

1. Make pesto

Blend parsley, basil, chives, pistachios, olive oil, lemon juice, garlic, water, salt, and pepper until smooth but slightly textured.

2. Warm beans

Heat olive oil in a pan over medium heat.

Add sliced garlic; cook 30 seconds until fragrant.

Add beans and warm gently 2–3 minutes.

3. Toss

Remove from heat.

Stir pesto through warm beans until creamy and coated

4. Serve

Transfer to a bowl and garnish with pistachios and lemon zest.

Add Parmesan or feta for non-vegan version

Serve over toast, grilled sourdough, or polenta
